About Us

We are changing the way Mexican food is presented in Hawaii, by offering the most traditional regional dishes made with the highest quality ingredients to transport our customers to a rural kitchen in Mexico or the beaches and fishing villages of Sinaloa.
Tlaxcalli is not a tired "concept", we are the way that Mexican food is supposed to be prepared and served, Our focus is in our homemade tortillas that are the base for all the dishes in Mexican cooking.
Our menu feels like home, we are not reinventing the wheel, we simply want to share the memories of our childhood through our food.
We invite you to come dine WITH US and enjoy our lively atmosphere either inside or in our back patio.


  • — CORN

    The most commonly consumed starch in almost all areas of the country and serves as the main ingredient in many recipes, the most common way to eat corn in Mexico is in the form of a tortilla, which accompanies almost every dish

  • — CHILES

    The other basic ingredient in all parts of Mexico is the chile pepper. Mexican food has a reputation for being very spicy, but it has a wide range of flavors and while many spices are used for cooking, not all are spicy.”

  • — BEANS

    Every family has a pot of beans on the stove or in the refrigerator at all times and almost every meal includes beans. They are the basis for refried beans and are used in many other Mexican dishes like refried beans, and enfrijoladas.

  • — RICE

    Rice is not native to Mexico and was brought over in the 1500s from the Philippines by the Spaniards. Contrary to popular belief, it is not consumed on a daily basis or served with every dish.


Most of our spices and chiles are flown from Los Angeles since we can't find them here. We do that to make sure the food tastes fresh and rich.


Our fish and seafood is acquired locally, teaming up with some small scale distributors and independent fishmongers allows us to provide our customers with the freshest items available.


Vegetables?!?!?! We don't eat no stinking vegetables...
Almost all of the vegetables we use in traditional Mexican cooking are not found in Hawaii, We mostly substitute with local vegetables similar to what is traditionally used.


Local beef and pork is what we use the most, we try to avoid using chicken since it has a history of maltreatment and enhanced growth in factory farms.
